If you’re like me, you don’t have a lot of time to waste at lunchtime. But what are some healthier, homemade options that don’t involve high glycemic index breads or time consuming salads? The purchase of my Magic Bullet has opened up a whole new world of lunch and dinner possibilities for me that go beyond juicing. I would like to share one lunch idea that is simple, quick, easy, low in calorie, flavorful, and delicious.
Green Veggie Soup
One small handful of each:
Broccoli, cauliflower, spinach
1/4 c potato
1 garlic clove
salt and pepper
chicken or vegetable broth
Add the vegetables to the bullet mixer, add salt and pepper and broth up to the top. Blend until completely pureed. Take it with you to work or school. Heat in the microwave for 2 1/2 minutes, add a dash of Parmigiano-Reggiano cheese and a bit of lean protein if desired. You have just made a vitamin-packed, super healthy, low calorie, energy-filled lunch. Voilà!
