Easiest Roasted Corn, Bacon, and Black Bean Salsa Ever!



1 ear of organic corn, removed from cob, separated into kernels

1 can organic black beans

1/2 roasted red pepper, diced

1/3 cup chopped cilantro

2 slices of cooked bacon

1 jalapeño pepper, diced

1/4 cup salsa

pepper, garlic powder, to taste

Roast the corn in a cast iron skillet or in the oven until browned and sweet. Combine all the rest of the ingredients in a bowl stir, and serve as a side for any latin dish. This served as a side for my Quinoa Ground Turkey Stuffed Peppers with Avocado Sauce. Amazing. Enjoy!
