Slow Cooker Posole

1 bone-in pork roast

1tbsp cumin

1 tbsp oregano

1 tbsp paprika

1 tsp red pepper flakes

1 tsp salt

1 tbsp pepper

1 large can hominy

1 large tomato, diced

1 small onion, diced

1- 1 1/2 boxes of organic chicken broth

cilantro

diced avocado

lemon wedges

tortilla strips

cotija or Parmesan cheese

Rub the pork in the spices and set in the slow cooker.  Top with hominy, onions, tomatoes, and broth. Cook for 7-9 hours on low or 4-5 hours on high. Remove the pork and shred. Add it back to the soup, ladle into bowls, and top with avocado, cilantro, more diced onion, cotila or Parmesan cheese, and tortilla strips. Serve with hot sauce and lemon wedges.
